Kukuruku Crispy Chicken Embarks on Flavorful Journeys: From Lakeland to Bartlett and Beyond
In the vibrant landscape of culinary ventures, Kukuruku Crispy Chicken, a local startup with less than a year under its belt, is already spreading its wings for multiple expansions in the near future. Dr. Roque “Rocky” Estipona, a Lakeland resident and the visionary behind Kukuruku, took the plunge last March by inaugurating the first location at 8950 U.S. 64 in Lakeland. Now, with the taste of success lingering, the prospect of a second location is materializing at 5985 Stage Road in the Bartlett Town Center commercial plaza.
This culinary odyssey is fueled by the resounding applause for Kukuruku’s signature Filipino chicken, which has become a local favorite. The anticipation is building, and Estipona envisions unveiling the new Bartlett location within the next few months. Positioned at the opposite end of Bartlett from the existing restaurant, this strategic move aims to captivate new taste buds while serving the loyal patrons in the area.
A pivotal element in Kukuruku’s success lies in its commitment to freshness and unique flavors. The lemongrass and herb-infused chicken, prepared without freezing and fried fresh after marinating overnight, has become a sensation. The menu extends beyond the crispy delights to include an array of sides, from regular, cheese, or barbecue fries to buttered corn and carrots, macaroni and cheese, boba milk tea, and freshly baked chocolate chip cookies.
Beyond the gastronomic appeal, Kukuruku is driven by a deeper purpose. Estipona, originally from the Philippines, brought the concept to the U.S. with Danilo Pumarega, Head of Operations. Despite being a co-owner of Still Waters Home Health Agency, Estipona’s primary objective is community service. He envisions Kukuruku as a platform for inclusion and diversity, offering employment opportunities for individuals with special needs.
The forthcoming Bartlett location will be a joint venture with another ownership group, filling one of the currently vacant spots in the Bartlett Town Center retail center. The move has garnered positive responses from local authorities, including John Threadgill, president of the Bartlett Area Chamber of Commerce, who sees it as a welcomed addition to the culinary diversity of the area.
Notably, Kukuruku is not stopping at Bartlett. Estipona’s ambitious vision extends to opening more Kukuruku locations over the next two to three years. The plan includes local expansions, such as in Millington and on Goodman Road in Desoto County. Beyond the Memphis area, Estipona is exploring the exciting prospect of establishing the first Kukuruku in Jonesboro, Arkansas.
